Chicken Lasagne Recipe...

Lasagne is one of my all time favourite meals but I do love changing things up so last night I decided to give it a go with chicken and OMG it was delicious! It was just as easy to make and just as tasty and I really couldn't recommend it enough. I thought I'd post my recipe for you in case anyone wants to give it a go!
Ingredients: (for 2 people)
2  chicken breasts
1 pepper, chopped
1 onion, finely diced
1 tin of chopped tomatoes
400ml beef stock
1 tbsp mixed herbs
1 tsp chilli powder
1 tsp garlic powder
Dried lasagne sheets
White sauce mix or if making your own - 20g flour, 20g butter, 200ml milk, 20g of cheese
30g cheese for the top

Method:
1. Cut 2 chicken breasts into chunks and fry in a pan with frylight
2. When cooked, add in the chopped pepper and onion and fry until they soften
3. When the pepper and onion has softened, add in 1 tin of chopped tomatoes and 400ml of beef stock
4. Now add in any seasoning you want, I use mixed herbs, garlic powder, pepper and chilli powder
5. Leave to simmer for around half an hour
6. If making your own white sauce, start after about 25 minutes. To make my own I use 20g of butter which I first melt in a saucepan, when melted I add in 20g of plain flour and mix until it forms a dough
7. I then start adding a bit of milk and stirring until it's fully mixed in, I use about 200ml but only add in a bit at a time
8. Eventually you should end up with quite a thick, sticky sauce and you can then add in 20g of cheese, just stir until it's all melted. To make life easier you could use a packet white sauce which I do tend to do if I can!
9. When both sauces are done you can start assembling your lasagne! I usually do a layer of the tomato sauce in a big dish, a layer of sheets, a layer of white sauce then repeat. I usually get a few layers of out all of this then top with around 30g of grated cheese
10. Bake in a 200 degree oven for around half an hour, then serve with whatever you like! We had ours with salad and cheesy garlic bread because I'm all about the cheese
This was just incredible and I already can't wait to make it again! It was just a nice twist on the classic lasagne and such a comforting meal.
