Simple Chocolate Chip Cookies Recipe

I last made these cookies a good few months ago now but I think I need to make more soon as they were so good, I really wanted to share the recipe as it is so simple and you don't need too many ingredients. When I first made these I actually left two main ingredients out but I think they turned out even better! So these actually have no eggs or vanilla extract. I thought that by leaving these out they would be awful but they were so nice, they were definitely a bit more chewy and crispy but still soft in the middle. 
125g butter, softened
100g light brown soft sugar
125g caster sugar
225g self raising flour
1/2 tsp salt
200g chocolate chips or a bar broken into small pieces. You can add any type of chocolate, I think they would be nice with a mix of milk and white!

If you did want to add the original ingredients you can also add 1 egg, beaten and a tsp of vanilla essence. 

1. Pre heat oven to 180 degrees
2. Cream butter and sugars together until they form a smooth mixture. This would be when you add the vanilla and the egg but obviously I missed that out
3. Sift in the flour and the salt and fold until combined
4. Add the chocolate chips and stir
5. Roll into walnut size balls and place on a prepared baking tray
6. Bake for 10 minutes and leave to cool on a wire rack
