Easy Slimming World Paella Recipe..

I made this Slimming World friendly paella a few months ago and honestly it tasted beautiful. I didn't follow a recipe or anything, just winged it and it actually went well! This is a really easy meal to make and if you do follow Slimming World it's full of speed foods and veg so definitely a great one to make if you follow the plan! I also made some Patatas Bravas to go on the side, just because we loved them so much when we had them at the Manchester Christmas Market and I really wanted to try and make my own, they also tasted amazing so I'll leave the recipe for those below aswell.
Ingredients:
2 chicken breasts 
150g paella rice
1 onion, or 2 handfuls of frozen onion
1 pepper or 2 handfuls or frozen peppers
1 tin of chopped tomatoes
500ml of chicken stock
salt, pepper and 1 tsp chilli powder
2 handfuls of frozen peas

Method:
1. Cut chicken into chunks and then fry in Frylight 
2. Add in frozen peppers and onion and fry until soft
3. When the chicken is cooked through and onions and peppers are soft, add in 150g of paella rice, stir and leave for a minute or so while preparing the stock
4. Add in 500ml of chicken stock, also add in a tin of chopped tomatoes, mix everything together 
5. Next add your frozen peas, also add in some salt, pepper and chilli powder. I would recommend just 1 tsp of chilli powder as I added a lot and it was very spicy!
6. Leave to simmer for around half an hour, make sure you keep checking on it and stirring as it can stick to the pan otherwise
7. When the stock has absorbed and the rice is done, dish up into bowls and serve
If you want to try making Patatas Bravas too like we did, it's basically roast potatoes and a spicy tomato sauce. So easy to make and very tasty. 

Method:
1. Peel 2 baking potatoes and cut as if you're making roast potatoes. Par boil them for 10 minutes then transfer to a dish or roasting tray, spray with frylight and season with salt and pepper
2. Cook your potatoes in a 200 degree oven for around 40 minutes until they're nice and crispy 
3. Start your sauce while the potatoes are in the oven, add to a saucepan, 1 tin of chopped tomatoes, 1 tbsp of tomato puree, 1 tsp of mixed herbs, salt, pepper and chilli powder. How much chilli powder is up to you, I added loads and it was too spicy
4. Mix all the ingredients in the pan and leave to simmer on a low heat while the potatoes are in the oven, this will make a nice thick sauce
5. When the potatoes are cooked, put into a bowl and add the sauce on top
6. Serve with your paella, or any sort of Spanish themed meal!
