The Best Slow Cooker Meals #2

A few months ago I did a post on my favourite slow cooker meals, I didn't expect to be doing another one so soon but I've discovered loads more meals and I wanted to blog about them!
Having a slow cooker has changed my life and there are now so many more meals that I can make which I couldn't before. I included 5 delicious meals in my first slow cooker post and since then I've discovered 4 more which are just as good. I am loving making all of these things, they're all so simple and just taste amazing. 

Chicken and Potato Curry

 I love a good curry, whether thats homemade, from a jar or a takeaway, I just love it but I didn't really think until a few months ago to try it in the slow cooker. I was a bit worried about how it would turn out, no idea why because it was one of the best curries I've ever had! To make this, I put in 2 chicken breasts which I've diced, 1 baking potato, peeled and cut into smallish chunks, 1 red onion, chopped finely, 1 tin of chopped tomatoes and 1 sachet of Schwartz Slow Cooker Curry Mix. I give it a good stir then cook on high for 4 hours. When it's done, the potato and chicken are so tender and soft and on top of rice, it's just incredible. I'm thinking of making this without meat next time, just doubling up the potatoes and maybe adding some cauliflower in as I love those two together in a curry.

Chicken Casserole 

 I mentioned this in my Food I Have Been Loving This Week #11 post, and to be honest if I could talk about this in every post I would, I think it's one of my favourite ever meals now. To make this I put 2 diced chicken breasts in the slow cooker, along with 3 chopped carrots, 1 onion, finely diced, a Colmans Chicken Casserole Mix and 350ml of boiling water. After stirring, I leave it on high for 4 hours but it can be done on low for 8 hours if you'd prefer. After about 3 hours, 15 minutes I make up some dumplings and place them on top of the casserole with the lid on for around 45 minutes. I hadn't ever made dumplings until a few months ago, and they were so easy and delicious.

BBQ Pulled Beef 

Most of the time when I use the slow cooker I tend to use chicken, I don't know why, there just seems to be loads more meals to make with it! but something I had seen a few people make was pulled beef and it always looked so good. For this, I used a small beef joint, 125g of tomato puree, 150ml of cold water, 2 tbsp of sweetener and a Schwartz Pulled Pork Mix. I put the joint in the slow cooker, then in a jug I combined the recipe mix, tomato puree, water and sweetener. Pour over the beef and cook on high for 4 hours. After 4 hours it had all started to fall apart, I didn't really even have to do anything with it. I served it with new potatoes, peas and a Schar Gluten Free Ciabatta Roll. The beef was so nice with the ciabatta! 

Italian Chicken 

 This is one I sort of came up with by myself and surprisingly it went well! I'm going to do a full recipe on this even though it's relatively simple so look out for that soon! It was basically just chicken in a tomato sauce with a lot of herbs and spices, cooked on high for 4 hours and then shredded. I served it with rice and it was really nice.

Seriously writing posts like this makes me so hungry! I just want to make it all again now. I recommend all of these if you have a slow cooker, it's so good to just throw it all in and leave for hours!
