Slimming World Keema Curry Pie Recipe

I don't know if any of you following Slimming World but this was something I saw in the latest magazine and it is amazing! I get the magazine every month as they have so many healthy and tasty recipes and there is always something new to try. Keema Curry Pie is basically a spicy shepherds pie and you just have to try it. I followed the basic recipe I'd found and just adapted it to suit what we already had in so it's a great one to put your own stamp on.

Ingredients: for 2 people
250g Lean Beef Mince
1 onion, finely diced
2 baking potatoes, peeled and chopped
1 tsp ginger powder
2 tbsp curry powder
1 tsp of cumin powder
1 beef stock and 400ml water
1 can of chopped tomatoes
Salt and Pepper
Cheese

Method:
1. Spray a pan with frylight then brown the mince, whilst this is cooking you can start the potatoes boiling
2. Add in the chopped onion and fry until soft
3. Add in your spices - curry powder, ginger and cumin and stir well into the mince
4. Pour in the chopped tomatoes and the beef stock, mix well then leave to simmer for around 30/40 minutes
5. Once the potatoes are boiled and soft, you can mash! I just add some salt, butter and milk to get it nice and smooth
6. Pre-heat your oven to 200 degrees and assemble the Keema Curry Pie. Add in the mix mixture to a dish and then top with the mash
7. Add grated cheese to the top and bake in the oven for half an hour until golden and crispy
8. Serve with vegetables and gravy for a lovely, filling meal
Let me know if you give this a go one day, it was so delicious! Really one of my favourite meals I've ever made.
