Slimming World Fanta Chicken Recipe

Ages ago I posted a recipe for Slimming World Diet Coke Chicken and this is very similar apart from a few extras I've added and obviously its fanta, not coke but we had it a few weeks ago for the first time in months and months and it was really nice so I wanted to post it on here for you. 
Ingredients:
1 pack of chicken breast fillets
1 yellow pepper
1 onion
1 tbsp Tomato Puree
3 tbsp of passata
330ml of diet fanta
1 chicken stock cube
salt and pepper

Method:
1. Cut the chicken breast fillets into chunks and then fry in frylight
2. While the chicken is cooking, chop up an onion and a yellow pepper into small pieces then add to the pan
3. When the chicken is cooked and the pepper and onion has started to soften, add 1 tbsp of tomato puree and make sure it coats everything in the pan
4. In a jug, measure 330ml of fanta and then add 3 tbsp of passata to it and give it a mix. This can then be added to the pan, stir and leave to simmer
5. At this point I added a stock cube with a small amount of boiling water, I can't remember the exact amount, maybe around a cup full and again left it to simmer into a thick sauce. You can also add any salt and pepper and herbs to it now
5. When you have a thick sauce, you can serve it with golden rice and vegetables. I boiled some peas then added them to the cooked rice and served with broccoli on the side

I love making meals that are simple and quick and this is one of them, you can pack it full of vegetables or 'speed foods' if you do slimming world and it just tastes so nice. Like sweet and sour but much healthier.
