Weekend Summary 21 - Movie Days and Making Doughnuts!

This weekend I feel like I went back about five years as we had a proper movie weekend and watched some of the Twilight films again which used to be my favourite, I used to be obsessed with them! I love when we just have a day or a weekend where we literally do nothing but just relax and watch loads of films, we did that with the Harry Potter films a few months ago and as it had been years since I watched the Twilight films, I thought I would make George endure them all over again! Another film we watched this weekend was Room which was honestly so good, it just hooked me in from the start and at times was so tense, made me feel quite emotional at times too. I definitely recommend watching it if you haven't seen it. Apart from watching films this weekend, I managed to do a bit of baking and cooking which is my favourite thing to do.
On Saturday night I made one of our new favourites, chicken stuffed with Philadelphia and spinach. I saw the recipe on a random Facebook page a while ago and it looked really good and I knew I could adapt it to make it a bit more slimming world friendly. The first thing I had to do was wilt some spinach, I almost used a full bag as it wilts to basically nothing, I then added some Philadelphia to that and mixed it. I cut a few slits in each chicken breast, this is where the spinach, Philadelphia mix goes. Cook in a 200 degree oven for around 20 minutes then add some grated cheese and put back in the oven for another 15/20 minutes. I love it as the cheese goes all crispy and all the flavours together are so nice. I also made some slimming world chips to go with it and I had a salad and George had some veg with it. I just love cooking and trying new things. I also made Hunters Chicken for the first time a few weeks ago and I was very impressed with myself.

I had seen in M&S that they had got some new baking kits and they all looked so good but the Doughnut one caught my eye and I really wanted to try making some so this weekend I picked one up! It was on offer, I think it was around £1.90 and they had loads of other baking kits so i definitely want to pick up a few more to try. These weren't too hard to make but they did take a while as there is a lot of proving to do, it took me a few hours in total but they were worth it. I wouldn't say they were perfectly round or anything and it was hard to get any jam into them but they did taste nice and George ate basically all of them so thats how I know they were good! I also decided to make some cookies with a few bits of leftover Easter chocolate, there was some daim eggs, a bit of dark chocolate, a little lindt bunny so I had just chopped all that up and added it to my cookie dough mix. They were soft and gooey in the middle but the edges were crispy and I was so happy with myself! Little things like baking something and it going well make me really happy.
