Easter Rocky Road Recipe

Does anyone else start buying Easter chocolate as soon it's in the shops? I do and I also plan on stocking up before it's gone so I can have my creme egg fix for a little bit longer. As I always have some sort of Easter chocolate in at the moment, I thought I would make some rocky road with it all! I basically followed my Tiffin recipe, made a few adjustments and added in a few extras. IT WAS DELICIOUS! 
Ingredients:
120g of butter
2 1/2 tbsp of sugar
2 tbsp of golden syrup
4 tsp of cocoa powder
250g of digestive biscuits
70g mini marshmallows
100g of mini eggs
100g dark chocolate
100g milk chocolate

Method:
1. Grease and line a square baking tin with baking paper
2. In a saucepan, melt butter, sugar, golden syrup and cocoa powder, make sure to keep stirring
3. In a bowl crush the digestives to small chunks with a rolling pin
4. When the mixture has melted, pour in the digestives and stir until combined
5. Now add in about 55g of mini marshmallows and 60g of mini eggs, make sure everything is mixed together well and pour into the baking tin
6. Melt the dark and milk chocolate and pour over the top of the rocky road
7. Top with the remaining 15g of mini marshmallows and 40g mini eggs and leave to set in the fridge for 2-3 hours
8. When the chocolate has set, cut into squares and enjoy!

I got 9 huge squares out of this and it was so filling but honestly amazing. You could use a rectangular tin instead if you'd prefer to get smaller bite size pieces, perfect for a party or if you have people visiting. I will definitely be making these again and adding loads of other easter treats, creme eggs, daim eggs etc. would all work so well!
