The Best Peanut Butter Cookies Recipe

Today's recipe is for cookies, but not just any cookies, it's peanut butter cookies! How many times can I say cookies in a sentence?! These are one of the best things I've ever baked and I don't say that lightly. I love making cookies but it can be hard to get them right sometimes, luckily these just worked so I had to share the recipe. I'm not usually a huge fan of peanut butter but for some reason with these, I can just keeping eating one after the other!
Ingredients:
50g soft light brown sugar
50g caster sugar
50g of unsalted butter
1 egg
1 tsp vanilla essence
200g of peanut butter
100g plain flour
1 tsp bicarbonate of soda
A pinch of salt

Method:
1. Preheat oven to 170 degrees
2. Cream the butter and sugars together until smooth
3. Add in the egg, vanilla and peanut butter. Blend until smooth 
4. Add in the flour, bicarbonate of sofa and salt and mix
5. Form into balls and place on a baking tray
6. I then pressed down with a fork and baked them for about 10 minutes so they were soft in the middle but a little crunchy on the outside
Let me know if anyone of you give these a go, they are so good and such a favourite of mine now.

A Late Valentines Trip To London

On Monday we went to London for a late valentines trip for 2 nights and we had the best time. We took so many pictures, did all the tourist things, ate so much nice food and did lots of sightseeing. Unfortunately we didn't get to see Buckingham Palace, but I think we managed just about every other place so I thought I'd share some of the photos. I already know I'm going to love looking back over this in future.
I don't know if this statue has a name but George saw this and wanted to take a picture! Also Houses of Parliament and Big Ben!
Our hotel, County Hall Premier Inn was next to the London Eye, we could see it from our hotel room. We were right in the centre and as we were so close to the London Eye, if we got lost we could look for that and could work our way back which was helpful. That did happen a few times! Just round the corner from the London Eye was the Houses of Parliament and Big Ben, its unreal that we were so close to everything, I managed to get some pretty good pictures too on my new camera. Other places we visited were Downing Street, Oxford Street, Regent Street, Covent Garden, Hyde Park and Piccadilly. I think I have covered everything but I'm sure they'll be more to see in future. We did really want to go to Buckingham Palace and we were actually on our way there on Tuesday after Oxford Street but my feet couldn't take anymore. I honestly though I was going to collapse because I was in so much pain. Dramatic I know. I don't do well with my feet and wearing pumps and walking around London just don't go together well. I did get some nice new boots from Next which I wore too and they were a lot comfier. I got the Tan Zip Detail Western Boots and I love them! Luckily we had a nice comfy bed to get back to in the hotel so we could relax a little after all the walking, I slept so well, I really struggled to get up each morning because I was so warm and cosy! 
London Eye, Pizza Hut, Selfridges, Garfunkels. 
George definitely spoiled me in London. I got some new makeup from Superdrug that I had been wanting for ages and some new nail polishes. So many bath bombs from Lush, my favourite shop! 
The boots I've mentioned, some clothes, books, i'm struggling to remember now as I'm writing this before I unpack it all! I finally managed to get my hand on a tangle teaser too! Oh my god, I wish I had got one of these sooner, I struggle so much with getting a brush through my hair and this just works. Now my hair has been cut quite a bit shorter than what it was, it was getting easier but with this I don't have to struggle at all. I really recommend it. George did get some nice things too while we were there, he basically got a whole new outfit and looked very very nice. We actually managed to take a few selfies while we were in London, I hate having my picture taken so this was kind of a big thing for me but I was brave and just went for it. I love having new pictures of us, I think we'll definitely both remember London and what a good time we had. Hopefully we'll get to go again soon!

Chicken, Bacon & Pea Risotto Recipe

It's not often I make risotto and I don't know why, because I love it! I made it a few weeks ago so I thought I would blog about it and post the recipe for anyone wanting to give it a go!
Ingredients:
Around 200g of risotto rice
A chicken stock cube
500ml of boiling water
Cooked chicken - I use about 2 chicken breasts
Cooked bacon, broken into small pieces, as much as you want
Frozen peas

Method:
1. Cook your chicken and bacon, break up into small pieces and set aside
2. Add rice to the pan and leave to fry for about a minute
3. I then added around 250ml of water and a chicken stock cube. Gave it a stir and left to simmer. 
4. After about 15 minutes you will need to add more water, add the remaining 250ml and also add your chicken and bacon into the mix too
5. After another 15 minutes you can add your frozen peas, these will cook quickly so you won't need to boil them first. You can also add some salt and pepper too
6. When the peas are cooked and the rice is done, you can serve it up! I like to do ours with warm crusty bread!

This was super yummy, didn't take long to do and I already can't wait to make it again!
