White Chocolate Cookie Dough Buns Recipe

Cookie dough buns, one of the easiest things to make and delicious results every single time. I first started making these when we moved back from uni, I spent so much time baking those few months and they went down a treat with everyone so they're something I come back to every so often now. I thought it was about time I finally share the recipe, it's really adaptable, you can decorate them however you want, if at all, and you can choose whichever chocolate you prefer to go in the mix. Hope you enjoy if you give them a try!

Ingredients:
125g butter
125g caster sugar
 100g light brown sugar
1 egg
1 tsp vanilla essence
225g self-raising flour
A pinch of salt
100g of white chocolate chips (could use milk or dark if you prefer!)
50g extra white chocolate
50g extra dark chocolate

Method:
1. Line a cupcake/muffin tray with cases and pre-heat your oven to 180 degrees
2. In a bowl, cream together the butter and both sugars until smooth
3. Add in the vanilla essence and 1 egg and beat until combined
4. Sift in the self-raising flour and a pinch of salt and mix until it forms a soft dough
5. Add in the white chocolate chips and give one final mix before scooping into the cases
6. I use 1 tbsp of cookie dough in each muffin case, and then afterwards if there is any mix left I will go over them all again adding in more until all the mix has been used up
7. Bake in the oven for around 12-15 minutes. You will know they're ready when the top has started to brown and crisp up a little
8. Whilst your cookie dough buns are cooling on a wire rack, you can start melting your extra white chocolate and dark chocolate. I just melted these one at a time in a glass bowl over a pan of simmering water
9. Remove the buns from their cases, and drizzle over the melted chocolate of your choice. With some of them I even poured some of the chocolate in and let them set in the fridge!
