My Autumn/Winter Tomato & Pepper Soup Recipe

Soup, one of the most comforting meals ever in the Autumn and Winter months. It's something I reach for a lot at lunchtime and don't get me wrong, the majority of the time that's from a tin, but in the past I have had a go at making my own. It was a longggg time ago and whilst it was nice, it wasn't something I've rushed to make again, but a few weeks ago I thought let's give another recipe a go. I found a basic tomato soup recipe and decided to add a few extras in and surprisingly it tasted beautiful! So incredibly warming, perfect with some crusty bread and there were loads of leftovers which is always a bonus.

Ingredients:
12 salad tomatoes
1 garlic bulb
1 red onion
1 red pepper
Thyme
Olive oil
300ml vegetable stock
Balsamic vinegar
Salt & pepper

Method:
1. Pre-heat your oven to 190 degrees (170 if using a fan oven)
2. Now you want to chop up all of your veg. Halve your tomatoes, cut your whole garlic bulb horizontally, cut your red onion into quarters and then slice your red pepper into strips. Pop all of these into a roasting tin, sprinkle with thyme and a drizzle of olive oil, and season with salt and pepper
3. Roast in the oven for 45 minutes then leave to cool slightly
4. Remove the garlic from the skin and then tip into a food processor or blender along with the tomatoes, onion and pepper
5. Pulse until all the veg has blended and then pour into a large saucepan
6. You can now loosen the mixture with 300ml of vegetable stock and a few drop of balsamic vinegar
7. Warm up over a low heat and then serve!

The great thing about making soups is that you can blend them and then once cool, stick them in the fridge and re-heat later. It takes a matter of minutes on the hob to warm through again so it's such a great one to have in for a quick meal after work, or to have for lunch one day. We had ours with crusty bread which was beautiful!

Oh, I'm saving this to give it a go this Winter! I tried making my own vegetable soup a while ago and honestly, it was rank haha! But I trust your tastes and this sounds delicious! x
